The chuck wagon was invented by Texas cattleman Charles Goodnight in 1866, before his first cattle drive from Texas to the Kansas railroad. A tall chuck box was nailed on the back of a wagon, and its door dropped down to make a table. Shelves and drawers inside the box let “Cookie” store everything he needed, from his sourdough keg to tin plates, cups, and eating irons.
The chuck wagon was the hub of cowboy life. It was around the chuck wagon that they ate, told stories, sang songs, gossiped, talked over the day’s events and just plain relaxed before heading for their bedrolls.
